SOIL: characterized by the Marne of Sant’Agata: they are mixed clay, fine sand and calcareous components.
ALTITUDE ABOVE SEA LEVEL: 350 m.
IN THE VINEYARD: Over the past 30 years it has been significantly increased leaf area compared to the amount of bunches, in order to obtain consistently high quality grapes.
THINNING: The selection of the grapes takes place mainly in the vineyard during the entire phase of fruit set, veraison and ripening. Two green harvest are made manually in order to reduce the production per hectare and to have clusters all equal with a uniform ripening.
HARVEST: it is done by hand using small crates in order to haven’t broken grapes before the crushing.
VINIFICATION: we do a soft pressing using a pneumatic press and we use a technique called cryomaceration. It lasts 12 hours using dry ice (that is pressed carbon dioxide) with the aim of extract more aromatic and colorant substances and protect the wine from oxygen. We proceed with a cold static decantation of the obtained must which is then racked in a clean autoclave where the fermentation takes place, with controlled temperature at 15 – 16 degrees.
Subsequently the alcoholic fermentation stops when we have around 5 alcoholic degrees with the refrigeration at 0 degrees and we keep closed the stainless steel tanks in order to maintain the natural CO2 of the fermentation.
Cold stabilization takes place, followed by a sterile microfiltration bottling in the isobaric filler so as not to lose the natural perlage obtained.
All the operations after the fermentation are made using nitrogen in order to protect the wine from oxygen, to preserve aromatic and colorant substances and to limit the use of sulfites.
DRY EXTRACT: 18 g/L
COLOUR: intense straw color with a fine and persistent perlage.
BOUQUET: wide, round and harmonic with citrus notes and hint’s orange blossom, grapefruit and sage. Final with notes of white flesh peach, elder and chamomile.
FLAVOUR: sweet, creamy and very balanced where sugar and acidity give at the wine freshness and minerality. Delicate hint of yellow peach and tangerine with captivating citrine final.
